This was really easy to make and quite yummy!
Ingredients:
Shrimp:
- 1 lbs large peeled and deveined shrimp
- 1/3 cup flour
- 1 tsp salt
- 1/2 tsp cayenne pepper
- 2 cups of coconut flakes
- 2 eggs beaten
Sticky rice:
- 2 cups of basmati rice
- 2 tbsp cream of coconut
- 1 tsp salt
- 1 tsp pepper
- 1/2 mango chopped into 0.5 cm chunks
Instructions for shrimp:
- Preheat oven to 350 degrees
- Rinse and dry shrimp
- Mix flour, salt, cayenne pepper in shallow bowl
- Dip each shrimp into egg, then flour mix, then coconut flakes (makes sure to cover both sides thoroughly
- Place on baking sheet
- Bake shrimp for about 20 minutes or until they are pink and no longer transparent on the inside (flip at 10 minutes)
Instructions for rice:
- Combine 2 cups of rice and 2 cups of water, add salt and pepper
- Bring to boil in a pot and the turn down to low heat
- Cook for 15 minutes then add coconut cream and cook for another 5 min
- Stir in mango chunks and cook for 2-3 more minutes
Serve together and enjoy!
