Sometimes new recipe experiments don’t quite go as planned. This particular recipe came about because I wanted to make some banana walnut chocolate cookies, however the cookies failed. Instead, I accidently discovered that you can bake pancakes instead of using a pan and standing around for 20-30 minutes flipping them and making sure they don’t burn. This discovery has changed my life. Ok too dramatic. But it changed my breakfast making life :) Hope you’re all having a great weekend!
Ingredients:
1 banana mashed
1 egg
1/2 cup of chopped walnuts
1/2 cup almond flour
1 tbsp unsweetened cocoa powder
1 tbsp coconut oil (to grease baking pan)
Instructions:
1. Preheat oven to 350
2. Mix all ingredients, except coconut oil, together in a bowl
3. Use coconut oil to grease a flat baking pan
4. Spoon about 2 tsps of mixture for each pancake (spoon it the way you would with cookie batter, it will flatten out so place them about 1.5 inches apart
5. Bake for 20 minutes
6. Voila! Baked pancakes. Nothing burned and all delicious! :)
